Quick and Easy Apple Dumplings
When it starts to get chilly out, I start craving this recipe. It is the perfect mixture of soft apples, just enough crust, and a yummy glaze. And if you serve it with a scoop of vanilla ice cream, it really can’t be beat. My mom would make these dumplings for special family get-togethers. Maybe that is why they taste so good to me…or maybe it is because they ARE AMAZING! They seem like such a fancy dessert, but they are simple to make!

Ingredients:
- 3 large apples (pick your favorite! I usually use gala or honeycrisp)
- 2 pre-made pie crusts (I use one box of the pillsbury refrigerated dough)
- cinnamon sugar (I usually mix 1/4 cup sugar with 1 Tbs cinnamon)
- 1 stick butter
- 1/2 cup karo syrup
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 cups water
Directions:
Preheat oven to 375. In a medium saucepan, combine 2 cups water, 1/2 cup brown sugar, 1/2 cup sugar, 1/2 cup karo, 1 tsp cinnamon, 1 tsp vanilla, and 4 Tbs butter (half of a stick). Bring to a boil over medium heat.

While you are waiting for your mixture to boil, core and peel 3 apples. Slice apple pieces into about 1/2 inch slices.
Divide each pie crust into 1/4ths (making 4 triangles). Cut the remaining 4 Tbs butter into 8 pieces.
Place 3-4 apple slices in each pie shell. Sprinkle cinnamon sugar over the top of the apples. Add in one piece of butter and close the pie shell around the apples, doing your best to make sure it is completely sealed. Do this for each pie shell until all 8 dumplings are made.

Place dumplings evenly spread in a 9×13 baking dish. Pour the boiling mixture over the dumplings. If you have extra apples, I usually throw them into the pan as well. Bake in the oven for about 40 minutes, or until the dumplings are slightly browning on top and the sauce in bubbling.Â

These are DELICIOUS with vanilla ice cream on the side! Enjoy!
