Healthy Air Fryer Sausage & Veggie Power Bowl

When we lived in North Carolina, there was a restaurant called Piada that had delicious power bowls. They were the inspiration for this recipe here. But they were also inspired by a late night flight where the only restaurant open was subway and I ordered a sweet onion teriyaki chicken sub and fell in love with the sauce. Luckily, grocery stores sell it! So anyways, after I bought the sauce, I went through a phase of trying to figure out what I could use it on because I wanted to use it every meal. We have been trying to incorporate more vegetables into our meals. And I had just bought an air fryer for myself. Mix those things together and the stars aligned to bring you a healthy sausage and vegetable power bowl.

I cook them all in batches because I have found that the sweet potatoes take much longer to cook than the zucchini. If you don’t have an air fryer, you could also put it in the oven as a sheet pan dinner and cook it at 350 for about 40 minutes.

Begin boiling a pot of rice.

Start by dicing all of your vegetables. Dice your sweet potatoes about 1/2 inch thick. I leave the skin on, but feel free to peel it if you don’t like the skin. Air fry the sweet potatoes at 375 for 14 minutes. Chop your zucchini by slicing it in half and then doin 1/4 inch slices to make half moons. Chop your red pepper and your red onions. I leave my onions in larger slivers so my family that doesn’t like them can pick them out. Air fry the zucchini, pepper, and onion for 11 minutes at 375. Finally, slice your sausages into 1/2 inch discs. Air fry these for about 6 minutes at 375.

Serve your sausage and veggies over rice! Drizzle with sweet onion teriyaki sauce and enjoy!

Healthy Air Fryer Sausage and Veggie Power Bowl

A healthy and flavorful way to eat your vegetables AND get your protein.

Makes 6 servings

Ingredients
  • 1.5 cups rice (uncooked)
  • 6 sausages (chicken sausage, kielbasa, Polish sausage…)
  • 2 small zucchini
  • 1 red bell pepper
  • 1/2 red onion
  • 3 sweet potatoes
  • Subway sweet onion teriyaki sauce
Directions

Begin by preparing the rice in a pan. Add 1.5 cups of uncooked rice with 3 cups of water.

Dice 3 sweet potatoes (about 1 inch cubes). Drizzle with olive oil and sprinkle with salt and pepper to taste. Air fry for 14 minutes at 375 degrees, or until softened for a fork to pierce.

Dice the zucchini into half moons (about 1/2 inch thick). Dice the bell pepper and cut the red onion into slices. Air fry for 11 minutes at 375.

Cut the sausages into 1/2 inch discs and air fry for 6 minutes at 375.

Toss vegetables together in large bowl. Serve over rice with sweet onion teriyaki sauce drizzled on top!
